Excellent observational ethnography here. The Bavarian pub scene with the foam swirl and the metal scissors knocking realy captures how much ritual matters in beer culture. I spent some time in Munich and saw similar things, people inspect their beer like art critics lol. The Brussels vignette about the men in black felt almost cinematic, the way silnce can say so much in a pub.
